Mini Blackberry Cheesecake

Cheesecake was the first dessert that I was ever truly intimidated by- the cracking, trying to keep the crust together. It was too much, so instead I began by making much easier mini cheesecakes which eventually turned into treats with inclusions like these mini blackberry cheesecakes. These are done in around an hour and bake in their serving dish for less cleanup.

If you’re not a big fan of blackberries, any fruit preserves will work well in these cheesecakes. The amount shared in the recipe is an approximation as I don’t usually measure, but I wouldn’t go much further than double. Any more than that could make it more difficult for the mixture to hold together as it bakes.

Blackberry-basil is my favorite lemonade flavor, so I also included a couple of tiny basil leaves from our kitchen window herb garden as a garnish.

Mini Berry Cheesecake

Ingredients

For the Filling
  • 8 oz Cream Cheese, softened
  • 1/3 cup Sugar
  • 1 tsp Vanilla Extract
  • 1 Large Egg
  • 4 Tbsp Fruit Preserves or Jam
For the Crust
  • 5 Graham Crackers
  • 1/4 cup Powdered Sugar
  • 4 Tbsp Butter, melted

Equipment

  • 4 Small Ramekins

Method

  1. Pre-heat the oven to 375F.
Make the Crust
  1. Crush the graham crackers by placing them in a Ziploc bag and smashing/rolling them with a rolling pin.
  2. In a bowl, stir in the powdered sugar and graham cracker crumbs together until they're well mixed. Add the melted butter and stir until completely incorporated.
  3. Use a spatula to separate the mixture into the four ramekins and smash it against the bottom. This will turn into a well-pressed crust.
Prepare the Filling
  1. In a stand mixer or with a hand mixer, beat together the softened cream cheese and sugar until smooth. Add vanilla and egg, and mix until smooth again.
  2. Separate the filling evenly into the ramekins.
  3. Swirl the preserves into the cheesecake filling with a toothpick or fork.
Bake and Finish
  1. Place the ramekins on a baking sheet to make it easier to handle them, then place them in the oven to bake at 375F for 30 minutes.
  2. These can be served hot or cold. Allow ramekins to cool to room temperature before moving into the refrigerator. Top with fresh fruit or honey for extra flavor.
